Early summer and I’m itching to make something with our first little harvest.

for a savoury breakfast the almost garlicky notes of the blossoms pair beautifully with the salty rich cheese over the dense rich pancake. A drizzle of maple syrup to serve over top is also delicious!

Chive blossom dutch baby pancake

ingredients

  • 2 eggs
  • 1/2 cup flour
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1 tbsp sugar
  • 2 tbsp butter
  • 1 cup fresh chive blossoms, chopped finely
  • 1/2 cup fresh oregano leaves, chopped
  • 1 tbsp olive oil
  • 1/4 cup shredded sharp white cheddar
  • 2-3 tbsp chunks of brie

directions

  • Preheat the oven to 400 degrees
  • in a cast iron pan, add the butter and place in the oven to heat while you prep the batter
  • in a bowl or blender, mix together: eggs, milk, flour, salt, sugar, vanilla
  • get the hot buttery skillet from the oven and por the batter in
  • bake 15-20 minutes

meanwhile, make the topping:

  • In a separate skillet, heat olive oil.
  • add the chives and oregano, salt to taste.
  • saute on high till softened.

When the dutch baby is cooked:

  • pull out of the oven
  • spread your chive mixture over top
  • sprinkle cheddar, dot with chunks of brie
  • serve.
