
Early summer and I’m itching to make something with our first little harvest.
for a savoury breakfast the almost garlicky notes of the blossoms pair beautifully with the salty rich cheese over the dense rich pancake. A drizzle of maple syrup to serve over top is also delicious!
Chive blossom dutch baby pancake
ingredients
- 2 eggs
- 1/2 cup flour
- 1/2 cup milk
- 1/2 tsp salt
- 1 tsp vanilla
- 1 tbsp sugar
- 2 tbsp butter
- 1 cup fresh chive blossoms, chopped finely
- 1/2 cup fresh oregano leaves, chopped
- 1 tbsp olive oil
- 1/4 cup shredded sharp white cheddar
- 2-3 tbsp chunks of brie
directions
- Preheat the oven to 400 degrees
- in a cast iron pan, add the butter and place in the oven to heat while you prep the batter
- in a bowl or blender, mix together: eggs, milk, flour, salt, sugar, vanilla
- get the hot buttery skillet from the oven and por the batter in
- bake 15-20 minutes
meanwhile, make the topping:
- In a separate skillet, heat olive oil.
- add the chives and oregano, salt to taste.
- saute on high till softened.
When the dutch baby is cooked:
- pull out of the oven
- spread your chive mixture over top
- sprinkle cheddar, dot with chunks of brie
- serve.
